Ten chefs, with a total of 11 Michelin stars among them, will celebrate the 10th Anniversary of NH Collection Hotels & Resorts by cooking up exclusive breakfast dishes. Dubbed the Signature Breakfast Constellation Edition, the event will highlight local produce through distinctive dishes crafted by renowned and awarded chefs at select NH Collection Hotels & Resorts across Europe and Latin America.

Throughout 2025, NH Collection Hotels & Resorts – part of Minor Hotels – is set to celebrate its 10th anniversary.  Meanwhile, in order to mark this major milestone, the brand has partnered with 10 renowned Michelin-starred chefs at 10 of its hotels worldwide to create the Signature Breakfast Constellation Edition, a culinary initiative that highlights one of the brand’s core pillars: gastronomy.

Meanwhile, these 10 participating hotels are located in cities across Europe and Latin America, with each chef creating a dish paired with an expertly prepared drink that showcases the local produce of the hotel’s destination. Moreover, these made-to-order breakfast dishes will be available at the participating hotels through October 2025.

Between them, the chefs collectively hold 11 Michelin stars. Moreover, each dish emphasizes high-quality local produce, with some opting for classic preparations and others taking a more innovative approach, always focusing on offering healthy options.

Three of these participating hotels are located in Spain. Chef Javier Olleros in A Coruña holds two Michelin stars at Culler de Pau (O Grove, Pontevedra) and created a dish for NH Collection A Coruña Finisterre.

In Spain’s capital, guests at NH Collection Madrid Palacio de Tepa can enjoy a unique breakfast dish by Chef Paco Roncero. He holds two Michelin stars at his namesake restaurant, located in the iconic NH Collection Real Casino de Madrid, a hotel operated by Minor Hotels.

The third hotel in Spain is NH Collection Cáceres Palacio de Oquendo, and will offer a dish created by Alejandro Hernández Talavante (Versátil Restaurant, 1 Michelin star).

Five other participating chefs are among Europe’s most renowned culinary talents, as follows:

  • Nicolai Nørregaard (Restaurant Kadeau, 2 Michelin stars, Copenhagen, Denmark)

Chef Javier Olleros, NH Collection A Coruña Finisterre, has crafted a dish centered around Galician eggs and cheeses: house egg with breadcrumbs and smoked cheese cream.

Meanwhile, Chef Paco Roncero at NH Collection Madrid Palacio de Tepo presents oil bread toast with cucumber, miso yogurt, Parmesan, and extra-virgin olive oil pearls.

Chef Alejandro Hernández’s creation for NH Collection Cáceres Palacio de Oquendo features a slow-cooked, free-range egg, codillo confit, concentrated Iberian ham juice, Presta jelly and crunchy breadcrumbs.

Moreover, Chef Ciro Scamardella at NH Collection Roma Cinquecento also spotlights the egg with his dish, Egg 65°C, featuring pecorino cheese foam, morone fish loin on a bread waffle, and a mixed salad with chia seed citronette.

In Milan, Chef Iside de Cesare has crafted a dish for NH Collection Milano CityLife: foam egg white with crispy yolk, broccoli cream, guanciale, and toasted brioche bread.

Meanwhile, in the Netherlands, Finland and Denmark, the spotlight is shared between local fish, such as salmon, and other regional specialties, including honey and seasonal fruits.

Chef Nicolai Nørregaard for NH Collection Copenhagen presents a dish that perfectly embodies his commitment to local ingredients, a value also championed by NH Collection Hotels & Resorts. Meanwhile, his creation features cold-smoked Bornholm salmon toast with Kadeau preserves. Moreover, the toast is fried sourdough with elderflower butter, topped with egg yolk, honey and plum glaze, preserved elderflower, lightly whipped crème fraiche, and horseradish, a tribute to the tradition of Bornholm smokehouses.

Chef Mikael von Lüders at NH Collection Helsinki Grand Hansa pays homage to Finnish identity with his Röpörieska, a Finnish barley and buttermilk flatbread served with cold-smoked salmon and a poached egg cooked at 147°F.

Meanwhile, in the Netherlands, Chef Yuri Wiesen offers minute-smoked Scottish salmon on brioche toast, accompanied by a quail egg, watercress, and hollandaise sauce, alongside a glass of NH Collection 10th Anniversary Cava at NH Collection Eindhoven Centre.

Looking at Latin America, the breakfast dishes take on entirely new ingredients and concepts. Chef Mikel Alonso in Mexico focuses on pork with his creation for NH Collection Mexico City Reforma. The dish includes truffled pig’s trotters, poached egg, Iberian cream, and smoked foam, accompanied by crispy grilled bread.

Next, in Buenos Aires, Chef Luciano García presents crispy potato rösti with smoked aubergine cream, cured zucchini, roasted beetroot, smoked trout, poached egg, glazed carrots, fresh olive tomatoes, and librito de grasa for NH Collection Buenos Aires Crillón.
